The following flow doesn't account for quantities, but it will at least cover items that are missing, such as display items.

Start with customer favorites
Action -> Add to Stack -> Create new stack (customer, My Stack, your choice)
Select all items in favorites view or your last inventory stack for the customer
Walk through sales floor and deselect items you see
Done. You now have a stack containing all missing items

Alternate technique:

Start with customer favorites
Action -> Add to Stack -> Create new stack (customer, My Stack, your choice)
Select all items in favorites view
Tap Done.
When you walk through sales floor, select Action -> Remove from Stack
Select items you see
Done. You now have a stack containing all missing items

From here you can populate a new order using the Action -> Add to Order feature.
